In the same way that the Côte d’Azur inspired the Great Masters of painting, today it is a land of creation for the Great Chefs. The rain of stars that adorns the tables of the region is testimony to the great talent and inventiveness of the chefs which continue to dazzle gourmands from around the world.

However to preserve and promote Cuisine Niçoise, the authentic cuisine of Nice, restaurateurs are adopting the registered brand "Cuisine Nissarde, le respect de la tradition".

From family establishments to gastronomic tables, restaurants displaying the logo (in their window) offer traditional recipes of authentic Cuisine Niçoise: pissaladière (onion tart), salade niçoise, ravioli, gnocchi, daube (beef stewed in wine), stockfish (dried cod stew), ratatouille, farcis niçois (tiny stuffed vegetables), tourte de blette (Swiss chard tart), pan bagnat (Salade Niçoise sandwich), sardines farcies (stuffed sardines), poche de veau farcie (stuffed breast of veal), ganses (sweet fritters), tian de courgettes ou de courges (stewed courgette or marrow)…
