The story of Maison du Colombier

Roland Chanliaud has quit the world of Michelin stars, large kitchen teams and luxury gastronomy for the freedom of a "Gastro bar" right in the centre of Beaune opposite the Notre Dame basilica. In summer, locals and tourists alike can meet here and enjoy an aperitif to savour on the terrace watching the night-time illuminations, inspired and inventive cuisine such as mini-sardine sandwiches or a 63° organic egg, bacon and Burgundy (External link) truffles, unless you give in to the delicious Iberian charcuterie, all accompanied by a glass of wine from the Beaune region selected by your host.

The Maison du Colombier is part of the Beaune (External link) landscape, classified as a historic monument. It dates from 1574 and is recognisable by its tall hexagonal turret. What makes it so charming is that it has retained its original layout and a magnificent corner tower that gave its name to the house. Inside, it's just as cosy, with 3 vaulted rooms in a row to welcome guests with their low tables and comfortable chairs.

Ideal for meeting friends or as a couple, while behind his large counter, Chef Chanliaud prepares dishes by the minute. You have the choice of very short menus, with different dishes every day according to the seasons. You can feast on a wide variety of tapas from Burgundy and beyond, truffled taramasalata, partially cooked wild salmon and potato vinaigrette to enjoy with one of the 900 wine references.
The icing on the cake - you can stay here, too, as upstairs, 5 urban apartments with contemporary decor overlooking the basilica await weary travellers.
