Boris has built strong relationships with the Sydney French community setting the French direction for many of the gastronomic events at the hotel. Some of the signature dishes he has created over the years include Boeuf Wellington a notre Facon, Sauce aux Truffles and Feuillaintine Pralinee. Chef Boris also mobilized the pastry department to design the hotel’s popular high tea offerings including the renowned art inspired Archibald High Tea in partnership with the Art Gallery of NSW and the Beauty and the Beast High Tea in partnership with Walt Disney.
